Protein Pumpkin Muffins

thegingerrussell I am very well aware that all things pumpkin aren’t cool again until october…but I had a few pumpkin flavored things I wanted to get out of my pantry so of course, these protein pumpkin muffins seemed like the right way to go 😋

ingredients:
– 1/4 cup almond butter
– 1 can pumpkin – 1 egg – 1 scoop @drivennutrition whey protein (caramel latte)
– 2 tablespoons @easthillhoneyco honey
– 1 banana – 2 tablespoons flaxseed – 1 tablespoon chia seeds – 1 tsp ground cinnamon – 1/2 tsp nutmeg – 1/2 tsp ground clove – 1 tsp vanilla extract – 1/2 tsp baking soda – @purely_elizabeth granola (I used the special edition pumpkin spice flavor, but any flavor will work)

directions:
– preheat oven to 375
– spray a muffin tin with cooking spray – place all ingredients except the granola into a blender, pulse until smooth. – fill each tin 3/4 of the way full. – top each with @purely_elizabeth granola. – bake for about 25-30 minutes. – let cool before removing from pan
