Banana Coconut Protein Muffins!

The unsweetened coconut flakes are of course optional, I was trying to find a way to incorporate some healthy fat that I didn’t have to spread on the muffin – and this was my solution! I find the combo delicious…but you be the judge! Don’t like coconut? Skip it and add 1/2 tsp of natural peanut or almond butter instead for some healthy added fat. This is my #1 GO TO healthy balanced snack during the day, it has about 1 serving of all 3 macro-nutrients (carbs, fat + protein). Totally satisfies ALL my sweet-carbs midday cravings!
Serving Size: 12 regular sized muffins
1 ripe banana
6 tbsp unsweetened applesauce
2 eggs
4 egg whites
2 scoops Driven Whey – caramel or your choice
1/4 cup unsweetened shredded coconut
1.5 cups old-fashioned quick cook oats
1 tsp cinnamon
1 tsp vanilla extract
Combine all wet ingredients, then add dry ingredients, mix it all up by hand! Spray muffin tin with olive oil spray and then I use a 1/4 cup measuring cup to measure out how much to put in each muffin tin. Bake at 375 for 20 minutes! Start to finish this takes 25 mins. ENJOY!
1 muffin = 134 calories – 3g Fat – 11g carbs – 10g protein
