🍁 Baked Apple Pie Protein Oatmeal w/Greek Yogurt
Dessert for breakfast? Sure! Why not? Especially when it’s actually healthy and fits your template.
Woke up this morning wanting something sweet? It tends to happen, especially around the holidays when you’re already thinking about yummy baked goods. However, trying your best to avoid over indulging in those treats, I know that can be prevented by being mindful of what you eat.
Knowing that you have to fuel your body properly in the morning in order to perform your best during training sessions also helps to stay focused. But what are you supposed to do when you are battling a major sweet tooth yet want to stay on track?! Answer: eat something that satisfies the craving but is full of natural sugars and whole grains rather than refined sugars and overly processed ingredients. This way, one can have their pie and eat it too, so to speak.
1/2 cup extra thick rolled oats
1 large egg
1/2 cup Coconut Milk
1 scoop Driven Nutrition Driven Whey Fresh Cinnamon Roll protein powder
1/2 small apple, peeled, and diced
1/4 tsp baking powder
1/2 tsp ground cinnamon OR apple pie spice
2 tsp vanilla extract
Dried mixed berries (optional)
1. Preheat oven to 375. Spray small baking dish with nonstick spray. Lay diced apples along the bottom of the dish.
2. In small bowl, combine oats, cinnamon or apple pie spice, baking powder and protein powder. Stir until well blended and sprinkle evenly over the apples.
3. In another bowl, blend coconut milk, egg and vanilla extract. Pour liquid over the oats.
4. If using, top with dried berries. Place in oven for 25 to 30 minutes. Serve warm with greek yogurt on the side. For a little extra sweetness, lightly drizzle with raw honey.
